Poha is an easy, healthy, filling, and delicious breakfast to start your day or even go well as an evening snack. This is a classic Maharashtrian Breakfast or snack which is served with a cup of tea and is absolutely light on your stomach. Maharashtrian Poha is made out of flattened rice, onion, potato, green chilies, curry leaves and garnished with peanuts, coriander leaves, and lime juice.
We moved out from Pune, Maharashtra when I was in 8th Std as my father was being transferred to another state, though I left the city many years ago but the city, its culture, its food, and its lifestyle never left me and is still in me. 😀 I still remember while going to school in the morning by Army school bus, I use to enjoy the cool and refreshing breeze of the morning and the smell of Poha. 😀 Street Vendors have come by now with their Thelas and start selling a hot plate of freshly made Poha topped with finely chopped onions, a handful of coriander leaves, a dash of chaat masala and squeezed lemon juice. Ahh! I am hungry now. 😀
Serve a hot plate of Poha with a cup of Masala Tea and enjoy the breakfast or your evening snack.

Ingredients:
- 1 ¼ Cup thick poha/ flattened rice
- ½ Cup onion, finely chopped
- ½ Cup potato, chopped in small cubes
- 2 Green chilies, finely chopped
- 6-8 Curry leaves
- ½ Tsp mustard seeds
- 1 Tsp cumin seeds
- ½ Tsp turmeric powder
- ¼ Cup roasted peanuts
- ½- 1 Tsp sugar or as required
- Salt as required
- 2 Tbsp oil
- ¼ Cup coriander leaves, for garnishing
- 1 Tbsp lime juice

Recipe:
Step 1- Soak Poha in water for 8-10mins or until it softens or keep under the running tap water till they soften. Strain the water completely and sprinkle turmeric powder
Step 2- Heat oil in a frying pan or kadhai and splutter mustard seeds, and cumin seeds. Add a pinch of asafoetida, chopped onions, green chilies, and curry leaves and fry for 2mins on medium flame
Step 3- Add the chopped potato and cover the pan or kadhai. Fry until they are cooked
Step 4- Add the roasted peanuts, soaked poha, sugar and required salt. Stir and mix well. Cover and cook for 2mins on medium-low flame
Step 5- Open the lid and garnish with fresh coriander leaves and lime juice. Give it a gentle stir and serve warm with a cup of tea
