Basil Pesto Pasta | Basil Pesto Penne Pasta

The delicious and flavorful Pesto is the star of this super-quick pasta recipe which can be made in a flash. This could be perfect for busy weeknights, just a handful of ingredients and your dinner is ready in less than 30mins.

Basil Pesto is full of flavors and I don’t want to mess with the flavors, so I tried to keep the pasta as simple as I could. Sometimes, keeping simple is the best thing we can do. 😀 I know how hard it was for me to not add colorful veggies to my pasta and keep it simple and classic. And trust me, it tastes amazing. Feel free to add your favorite veggies to the pasta. If you want some protein in your pasta, just saute some chicken chunks, tofu or paneer and add to the pesto pasta.

Serves 2
Ingredients:

  • 2 Cup penne pasta
  • 1 Cup cherry tomatoes, halved
  • 3-4 Tbsp basil pesto
  • 1 Tsp Oregano
  • 1 Tsp dried parsley
  • ¼ Tsp black pepper powder
  • 2 Tbsp grated cheese (optional)
  • 1-2 Tbsp olive oil or cooking oil
  • Salt as required

Recipe:
Step 1- In a large pot bring 4 cups of water to a boil. Add 1tsp salt and penne pasta to the boiling water and cook for 8-10mins on high flame until tender or follow packet directions. Keep under running tap water for 30secs so that they don’t stick to each other. Drain and keep aside

Step 2- Heat oil in a skillet pan, saute the cherry tomatoes till soft and yet they remain in their shape. Add black pepper powder, oregano, dried parsley, gently toss them and turn off the flame

Step 3- Add the cooked pasta and basil pesto to the skillet pan, mix them. Check salt and add if required. Garnish with grated cheese and serve
