Veg Pulao is a simple one-pot delicious recipe which can be served as a side to any vegetarian and non-vegetarian curries. And, it is one of the great ways to clean up the fridge and include lots of veggies in your diet too. 😉
If you do not have much enough time in-hand to prepare a full-fledged meal, then prepare this veg-pulao and serve with Boondi Raita or Cucumber Raita, and your meal is complete.
There are different ways to prepare this veg pulao and with different ingredients, all taste great without any doubt. However, I like to keep it as simple as that so that I can enjoy this dish with any curry. Add your choice of veggies to the pulao and keep the spices to a minimum.
For the perfectly fluffy rice, use a good brand of Basmati rice which is available in your area. I use Kohinoor Gold Basmati Rice, and every time I get perfectly cooked long grain Pulao/ Biryani without being mushy. ❤ Prior to cooking the pulao, soak the Basmati rice for 30mins and then drain the water.
Pair this mildly flavored rice dish with any curry, raita, and salad…A full-fledged meal is ready to be served.

Ingredients:
- 2 Cup basmati rice, washed and soaked for 30mins
- 1 Medium potato, peeled and chopped
- 1/3 Cup green peas
- 1/3 Cup carrot, chopped
- 1 Small onion, finely chopped
- 1 Bay leaf
- 2 Dry red chilies
- 1 Cinnamon stick
- 2 Green cardamoms
- 2 Cloves
- 1 Tsp cumin seeds
- 1 Tsp ginger-garlic paste
- 1 Tsp coriander powder
- Salt as required
- 1 Tbsp ghee/oil

Recipe:
Step 1- Turn IP to saute mode and when it displays hot, add ghee and splutter the whole spices. Add ginger-garlic paste and saute until the raw smell goes away
Step 2- Add chopped onion and saute until translucent. Add all the veggies, coriander masala, and required salt. Mix everything
Step 4- Add the soaked basmati rice and add 3-3 ½ cup water (as required). Do not add too less or too much water. Adjust salt if required. Cancel the saute mode and turn on the RICE mode (12mins). Clos the lid of the IP and turn the valve to seal side
Let the pressure release naturally and gently fluff the rice. Serve warm with any vegetarian or non-vegetarian curry and raita
