Wow, until this day I assumed that Dabeli is one of the Mumbai’s street food. Why so? Because it is made with Pav bread. Guess what? I was wrong and I am admitting that. Not everything made with Pav bread belongs to Mumbai. 😀
Kutchi Dabeli as the name says originated in the Kutch region of Gujarat. Dabeli refers to “pressed” and hence it is Kutchi Dabeli. This is also very popular in Mumbai as a street food.
It’s Tangy, it’s Spicy, it’s as flavorful as it looks.

There are many brands that sell Dabeli masala. However, I tried making mine at home. Homemade masala came out more flavorful and aromatic.

Serves 4
Ingredients:
For Dabeli masala-
- 1 TbspCumin seeds
- 2 Tbsp coriander seeds
- 6-7 Cloves
- 1 Tsp black peppercorns
- 1 Cinnamon stick
- 2 Tbsp red chili powder
- 1 Tsp Kashmiri red chilli powder
- Tamarind pulp
- 1 Tsp sugar
Dry roast all the whole spices and make a fine powder. Mix red chilli powder, Kashmiri red chilli powder, to the prepared masala.
You will get a small bowl full of Dabeli masala. Use as required and store the rest.
For Dabeli-
- 8 Pav breads
- 5-6 medium size potatoes, boiled and mashed
- 2 Tbsp Dabeli masala
- 1 1/2 Tbsp turmeric paste
- Red chilli and garlic chutney, as required
- Tamarind and dates chutney, as required
- 1/2 Cup pomegranate seeds
- 1 Cup nylon sev
- 1 Cup masala peanuts
- 1 Cup onions, finely chopped
- Salt as required
- 1 Tbsp butter/oil

Recipe:
Step 1- In a small bowl take dabeli masala, tamarind paste, salt, and add 1/4th cup water. Mix well


Step 2- Heat butter/oil in a pan and pour the masala and stir for 1min on medium flame


Step 3- Add the mashed potatoes and mix well with the masala. Make sure there are no lumps. Add water if required and cook for 3-4mins


Step 4- Take out the prepared masala to a serving dish and spread evenly
Add some chopped onions, pomegranate seeds, masala peanuts on the top. Sprinkle some nylon sev on the top of all


Making Dabeli:
Step 5- Make a slit in the centre of the pav bread or divide it into halves.
Apply tamarind and dates chutney on one half of the pav and the chilli garlic chutney on the other half

Stuff in the prepared dabeli mixture as desired. Now toast the pav in butter from both sides until slightly brown.
Roll the dabeli in nylon sev plate and serve warm to enjoy to the fullest.
