Soy-Chicken Fried-Rice

A quick recipe with some veggies and protein sounds like a good plan for the weekend, right? A bit of preparation and it’s done, Happy Weekend!

I had some leftover uncooked tiny-miny chicken pieces. And, also some cooked leftover rice from the lunch.

What would you make with leftover cooked rice? To me, I only think of Indo-Chinese dishes with leftover rice. Decided to make chicken fried rice with lots of garlic and chillies.

The only time-taking thing in cooking Indo-Chinese dishes is, to chop the vegetables very finely. Thank goodness I have this amazing vegetable chopper from Pigeon which comes handy for my Indo-Chinese dishes preparation. It’s available on Amazon and Flipkart as well.

While it might not be the authentic Indo-Chinese fried rice from the streets but is definitely a good recipe to try out.

Ingredients:

Soy Chicken

  • 250 Gms Chicken, cut into small pieces (I used leftover chicken pieces with bone-in) you can go for boneless too
  • 1 Tsp cornflour
  • 1/2 Tsp red chilli powder
  • 1/4th Tsp black pepper powder
  • 1 1/2 Tsp soy sauce
  • A fat pinch of Salt
  • 1 Tbsp oil for frying

For Fried Rice

  • Cooked rice (as per 2 people)
  • 1 Onion, finely chopped
  • 1 Carrot, chopped into small pieces
  • A handful of Spring onion, finely chopped
  • 1 Tbsp ginger, finely chopped
  • 1 1/2 Tbsp garlic, finely chopped
  • 1 Green chilli, chopped
  • 1 Tsp dark Soy sauce
  • 1 Tsp Chinese seasoning (Keya brand)
  • 1 Tbsp red chilli flakes
  • 1/2 Tsp Black pepper powder
  • Salt as required
  • 1 Tsp vinegar
  • 2 Tbsp oil

Let’s learn step by step recipe with pictures for Soy Chicken Fried Rice

Recipe

Step 1- Marinade the chicken pieces with cornflour, black pepper powder, red chilli powder, and salt. Leave it for 10-15mins

Step 2- Heat oil in a pan and fry the chicken pieces on high flame for 2mins. Turn the flame low and cook to until the pieces are done

Add the soy sauce and give it a mix. Turn off the flame and remove the soy chicken to a plate

Step 3- In the same pan, add 2tbsp oil and sauté ginger-garlic until it turn slightly brown. Add all the chopped veggies and sauté on high flame for 3-4mins.

Add in the black pepper powder, Chinese seasoning, and salt as required

Step 4- Add the cooked rice, soy sauce to the pot. Mix well and add in the fried chicken pieces

Turn off the flame, add 1tsp of vinegar and mix again. Garnish with spring onion and serve warm
